Quilombolas traditional food culture include culinary knowledges and agriculture skills that
tell histories of this communities that fought for their right to freedom and built their
autonomy using natural resources available in their territories in different historical,
economic, sociocultural and regional contexts. The objective of this study was understood
traditional food culture of Quilombo Lagoa Torta dos Pretos (Anagé-BA). This qualitative
case study research was conducted with observation and semi-structured interviews on
community. The research identified crops, traditional foods and related knowledge and skills.
Quilombo Lagoa Torta dos Pretos food culture is not limited only to culinary practices, but
reflects community history, culture and identity, including agrifood management, traditional
culinary practices, ancient recipes from ancestors, celebrations and rituals related to food.
Food has an important role in social cohesion and in preservation of culture and community
heritage. Through orality and older people’s memory, it was possible to record traditional
knowledge, which will contribute to local food culture knowledges and techniques
valorization for future generations.
