Resumo:
The research addresses the importance of preserving the traditional knowledge present in the preparation of Shrimp Moquequinha from Barra de Caravelas, highlighting the sharing of knowledge, the oral transmission of information, and the appreciation of local knowledge as essential to keeping this cultural practice alive, in addition, to promote their recognition and appreciation of Caravel's gastronomy. Intending to preserve the history and culture of the region, as well as avoid the disappearance of essential knowledge for the preparation of traditional products, we sought to present systematically and methodically the historical knowledge present in the knowledge and practices of the gastronomic traditions of the community. The methodology used in the construction of the research was a bibliographic survey. In terms of methodological approach, a qualitative descriptive study was carried out. The theoretical background addressed the historical and cultural aspects present in the preparation of Moquequinha, through books, academic articles, theses, and dissertations. This work was based on studies by Câmara Cascudo (2011); Teodoro Sampaio (1987); Müller (2012); Montanari (2013); among others. In the methodological field for the construction of the research, Gil (1994) and Cervo (2007) were used.
