Abstract: | To estimate the incidence and levels of Listeria spp. in an industrial poultry processing plant, samples of chicken breast meat, livers, surfaces of saws and tables, hands and gloves were analyzed. Forty percent of the breast samples presented Listeria : L. monocytogenes , L. innocua and L. grayi . Liver samples were contaminated by L. innocua and L. grayi. High levels of Listeria monocytogenes were found on saws ( < 30–2400 MPN/equipment) and tables ( < 30–11,000 MPN/equipment). Hands were contaminated by L. monocytogenes , L. innocua and L. grayi and gloves with L. innocua and L. grayi . The levels of Listeria on hands and gloves were low ( < 110 MPN/hand). L. monocytogenes serotypes were 1/2a, 1/2b, 1/2c and 4b. Overall, the study demonstrated the high prevalence of Listeria spp. and specifically L. monocytogenes in chicken breast meat, equipment and hands. Improvements and innovations at the poultry processing plant may effectively reduce final production contamination with Listeria. |
