Resumo:
With a steady rise in prevalence, children's cancer has affected more and more children in the
world and the treatment, most of the time, carries some symptoms in the gastrointestinal tract. As a result the afflicted children lose their appetite or can't eat certain types of food, causing a protein-energy malnutrition. Thus, the objective of the present study was to show the importance of Hospital Food in correct application of gastronomic food preparation techniques for children with cancer, admitted to treatment in an NGO in the city of Salvador.
To that end, bibliographic searches and online databases. Through observations in food
preparation, you can verify the need for a greater awareness on the part of the handlers, on the gastronomic techniques and how to apply them in order to leave the preparations best
presentable and appropriate to the child's symptoms. It was noted the deficiency on the pré-
preparo steps, preparation and submission of food, confirming that the knowledge about the
importance of hospital food is still limited. We conclude that the Hospital Food, coupled with
the dietoterápica prescription, is indispensable for the preparation of dishes more attractive
and appropriate in relation to the aroma, consistency, temperature.
